Ready your palate for a feast fit for kings! This classy entrée infuses fresh succulent seafood with the tropical flavor of tangy mangoes, rich coconut milk, and a hint of chili to create an unexpectedly delightful dish.

Ingredients:
6 large prawns, shelled and de-veined, leaving head and tail
3 tbsp. Pili & Pino Island Mango Preserve
2 tbsp. fresh calamansi juice
1/2 cup coconut milk
2 tbsp. olive oil
2 tbsp. chopped garlic
1 tbsp. chopped ginger
1 tbsp. chopped onion
1 tsp. chopped siling mahaba (espada)
Pinch of salt and freshly ground pepper

In a very large skillet, heat the olive oil. Add the chopped garlic and cook over moderately high heat until lightly golden, about 2 minutes. Add the chopped ginger, onion, and siling mahaba and cook for 30 seconds. Add the prawns and cook, stirring occasionally for 3 minutes or until the prawns are almost white. Season with salt and pepper. Add the calamansi juice and the Pili & Pino Island Mango Preserve.  Stir until well blended. Finally add the coconut milk.  Stir until the prawns are completely white.

Remove prawns from pan and place in shallow bowl.  Cook sauce for another minute or until thick.  Spoon the sauce over the prawns and serve. Enjoy!
